Balushahi is one of the oldest and best-loved sweets in Pakistani mithai. It looks a little like a glazed doughnut, but the texture is completely different: flaky and layered inside, with a crisp, sugar-glazed outside.

How balushahi is made

A rich dough is shaped into small rounds with a dip in the centre, fried slowly on low heat until golden and flaky, and then soaked briefly in syrup. As it cools, the syrup sets into a thin, shiny glaze.

What it tastes like

The first bite is crisp, then the inside melts into soft, buttery layers. It is sweet but not as wet as syrup sweets like gulab jamun, which makes it easy to pack and share.
